I thought nothing could top boxed brownies (yes, I like them even better than homemade brownies…) until I tried making brownie mix cookies. They’ve got the chewy texture of brownies but aren’t quite as heavy and pack a lot of chocolate flavor, especially when chocolate chips are thrown into the mix. I don’t usually love chocolate on chocolate because it tends to be too rich for me, but this combo is perfection. I’ve made these a few different ways (hello, s’mores brownie cookies and brownie mix cookie sandwiches) but I prefer the classic recipe for these! Feel free to get creative and be sure to make these as soon as you possibly can!
- 18.3 oz box of brownie mix (I swear by Betty Crocker Fudge Brownie mix, 100%)
- 1/3 cup of flour (I’ve played with other amounts such as ¼ or ½ a cup of flour, but 1/3 seems to be the ideal amount)
- 2 eggs
- ¼ cup of vegetable oil
- ½ cup of milk chocolate chips
Preheat the oven to 375°F. Beat all ingredients together until smooth. Scoop the mix onto a pan (lined with parchment paper aka easy clean up) using a spoon or small ice cream/cookie scooper and be sure to leave about 2 inches between each cookie. I usually lightly push a few chocolate chips into the top of each cookie at this point! Bake for 9-11 minutes (every oven is different, so keep an eye on them). Let cool and enjoy!
