Alyssa Berlin’s recipe for cookie pie
- 2 and 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons cornstarch
- 1/2 teaspoon salt
- 3/4 cup butter, melted and cooled
- 1 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg plus 1 large egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup (180g) semi-sweet chocolate chips
- Optional: tons of sprinkles
Directions:
Preheat the oven to 350°F. Place aluminum foil at the bottom of the pan and leave a slight overhang to make removal easier.
Whisk the flour, baking soda, cornstarch, and salt together in a large bowl. Set aside.
In a separate bowl, mix the melted butter, brown sugar, and granulated sugar together. Whisk in the egg, then the egg yolk. Finally, whisk in the vanilla extract. Pour the wet ingredients into the dry ingredients and mix together until combined. Fold in the chocolate chips.
Pour dough to the pan and press into an even layer. Bake for 32-35 minutes or until lightly browned on the sides. (or underbake them slightly and take them out at 25 minutes for ooey gooeyness)
